Kentucky Derby courts Pensacola chef James Briscione

This year’s 148th Kentucky Derby drew loads of attention thanks to its wild finish. The event also drew participation from Angelena’s Executive Chef James Briscione, who helped cook up a meal Thursday before the big race.

Briscione was one of 14 chefs chosen for the Taste of Derby event, which helped feed 1,300 people. Briscione chose to whip up Louisiana tuna crudo a la mint julep, according to the Pensacola News Journal. The dish contained smoked tuna and was topped with an Italian chili crisp.

“We knew we wanted to represent the Gulf Coast and Pensacola really well,” Briscione said.
